Three Ingredient Peanut Butter Cookies



No butter. 

Peanut butter cookies already promised to bored and ferocious little people who have already pulled up their stools to the counter in anticipation of copping half the raw dough "helping." And I reach my hand into the fridge's butter compartment that is inexplicably located above my eye level (a pox upon the house of the refrigerator designer!)to find nothing. Well, not actually nothing, a did find a tube of anchovy paste I forgot I had. Caesar salad for dinner tonight for the win! But no butter for our cookies. 

Thankfully, before I delivered the message to my never patient or understanding clients, I remembered this recipe for butterless peanut butter cookies. And yes, right there on Cooks.com are a multitude of recipes that are all exactly the same, three ingredient peanut butter cookies! No butter! And gluten free for the flour-haters!

So it goes a little somethin' like this:


  • one cup sugar
  • one cup peanut butter
  • one egg
Yeah, that's really it. Mix them bad boys up, no mixer required, roll them into one inch balls, flatten them old school with a fork (I didn't even need to use sugar on the fork, no sticking), and throw them into the oven at 350 degrees (I can't find the degree button on the keyboard!) and take them out ten minutes later. Begun and done in fifteen minutes, including prep and cleanup.

Absolutely delicious! Way better than the regular kind I make. Chewy, flavorful, so, so good.
